Use these hollow slender stalks in place of scallions, adding at the last minute to flavor any dish. They are more delicate than onions or scallions because they contain less sulphur. Chopped chives are a natural match for egg and potato dishes, for sprinkling on salads, soups or in sauces. Just be sure to use the most lithe, pliable shoots; older ones the shoots with lavender puffs on top - are already tough and woody.
